Award winning and acclaimed chef Michael Solomonov along with restaurateur Steve Cook are bringing their new restaurant Aviv to 1 Hotel South Beach this fall with a menu inspired by the flavors of Israel.
The pair are the founders of the five-time James Beard Award-winning hospitality group CookNSolo and are perhaps best known for their award-winning restaurant in Philadelphia, Pennsylvania called Zahav.
According to Eater, Aviv will feature a menu that has dishes such as Yemenite bread rolled by hand, hummus, various mezze plates, and kebabs grilled over charcoal in an open kitchen to accompany a drink menu feature an “easy-drinking” cocktails and a wine list with wines from Israel, Lebanon, and the Eastern Mediterranean.
The restaurant will have 186 seats across and indoor and outdoor seating layout and featuring a dedicated bar and lounge area as well.
“Aviv is actually in a lot of ways a combination of Zahav and Laser Wolf,” Solomonov said of the new restaurant.
Aviv, meaning “Spring” in Hebrew and referencing the cultural capital Tel Aviv, is designed to resonate with Miami and the Miami culture and inspired the two founders to come to Miami back when they ran a successful Zahav pop-up during Art Basel in 2018.
“We are so honored to join forces with the exceptional team at 1 Hotel South Beach, fusing our culinary vision with their unparalleled hospitality,” says Solomonov and Cook, according to The Miami Guide. “Aviv means “Spring” in Hebrew and is also a reference to Tel Aviv, the world cultural capital that shares an ethos with Miami. We could not envision a better partner for Aviv, a restaurant made for the beautiful community of Miami.”
“We are excited to welcome Aviv to 1 Hotel South Beach and bring a new, premier dining destination to the city,” 1 Hotel South Beach’s Regional Vice President of Operations Milton Sgarbi said. “By partnering with Chef Solomonov and Steve Cook, we continue to offer our guests and visitors new and fresh elevated dining options.”
